Cub Foods Opens Second Smaller Footprint Store

Cub Foods cut the ribbon on a 42,000-square-foot store in Eagan, Minn., that has a significantly smaller footprint than its average 68,000-square-footer. The new store is designed to look and feel like a local neighborhood market featuring a warm and inviting upscale décor, Cub Foods said.

Scott Lichtenberg, store director, cited the store’s “strong focus on the fresh side of the business [and] many unique offerings,” which he said will blend well with Cub’s tradition of low prices and great values.

Among the store’s highlights are a fresh produce department offering an expanded and unique product assortment, as well as a larger selection of frozen food items, a more substantial natural and organic foods section, and a full-service floral department. Other amenities include a pharmacy, a large bakery, and a full-service TCF Bank.

Cub developed the store in partnership with Radermacher Markets Inc., of Jordan, Minn.

Cub Foods operates 57 stores in the Twin Cities. Established in 1968 as one of the nation’s first discount grocery stores formats, it was acquired by Supervalu in 1980.
